Use it to top low carb biscuits or bread or even cauliflower mash. Best of all this hearty comfort food only needs 3 main ingredients and has 1.9 grams of carbs and 15.1 grams of protein!

I’ve been wanting to make sausage gravy for a long time now. My son loves gravy but I rarely make it. However last week I made some keto biscuits and used the leftover biscuits with this delicious keto sausage gravy. It was so good!

The creamy rich flavor was very delicious on top of the biscuits. Both my son and hubby loved it and it was so easy. You only need a few ingredients and can whip it up in about 15 minutes or less so it’s great for a low carb diet.

The gravy is thick and creamy and doesn’t use regular white flour, almond flour, coconut flour or any kind of flour that traditional recipes call for. And while it tastes great over keto biscuits, you could also use this in other ways, like over cauliflower mash, keto chaffles or even scrambled eggs.

What is sausage gravy and how do you make it keto friendly?

Traditional sausage gravy is a southern breakfast staple that is usually served over biscuits. It’s made with loose sausage that you brown in a pan. Then you take it out and make a roux which is a technique of browning all purpose flour with the remaining pork fat in the pan along with some seasonings. They you whisk in milk to make the gravy.

How we make this southern gravy into a keto recipe is to use use heavy cream instead of milk. Regular dairy milk has a lot more carbs. We also don’t use any flour like with traditional gravy and instead use cream cheese to thicken the sauce. The result is a rich and creamy sauce that goes great with the flavor of the breakfast sausage.

You could also use unsweetened almond milk (or non-dairy milk of choice) and a keto thickening agent like xanthan gum or glucomannan root to make a keto gravy. But I not many people have xanthan gum on hand so I went with the cream cheese.

Recipe ingredients I used.

This is a very simple recipe and all you need is heavy cream, cream cheese, breakfast ground sausage, salt and black pepper. You could also use ground beef and some seasonings or really any type of sausage but the breakfast sausage has lots of flavor and is easiest to use.

I used Bob Evans pork sausage that you get a roll. You don’t want links or anything with casings. It doesn’t matter what brand it is but I always get Bob Evans at Aldi.

You could also add a little heat if you wanted to by add a bit of hot pepper flakes or cayenne pepper. I don’t think you will need to season with salt because it seems to have plenty on it’s own.

How to make keto sausage gravy.

Step 1: Get out a large skillet and heat to medium high heat. Add the ground sausage and cook for a few minutes then turn down the heat to medium heat and continue until golden brown.

Step 2: Take the cooked ground sausage out of the pan and set aside.

Step 3: Using the same skillet, add the heavy cream, cream cheese, salt and black pepper. Whisk the mixture as the cream cheese melts to make a creamy sauce.

Step 4: Once the cheese has melted add back the cooked sausage to the creamy mixture and stir to combine. Let it cook for a few minutes and that it!

This white sausage gravy is heavy on the sausage but if you want you can use less of it or add extra cream cheese and cream. It’s quite easy to do either option. You could also add a bit of beef or chicken broth to thin it out.

This rich and savory low carb sausage gravy is super easy to make with just a few ingredients and about 15 minutes. Use it to smother keto biscuits or over eggs for a delicious breakfast on a low carb diet.

Ingredients

  • 16 ounces breakfast sausage in a roll
  • ½ cup heavy whipping cream
  • 4 ounces cream cheese
  • ½ cup water (or broth)
  • ½ teaspoon black pepper

Instructions

  1. Get out a large pan and heat to medium high heat. Add the sausage and break up with a spoon. Once it starts to brown, turn the heat down to medium heat.
  2. When the sausage is all browned, take out of the pan and set aside.
  3. Add in the cream cheese, heavy cream, pepper and water to the same pan. Whisk well to combine and when the cream cheese has full melted you will have a nice creamy gravy.
  4. Next add back the sausage to the creamy mixture.
  5. Simmer for a few minutes to get the sausage full integrated into the gravy and then take off the heat. Serve with low carb biscuits, eggs, cauliflower mash or even a savory keto chaffle.
  6. Store leftover sausage gravy in an airtight container.

Notes

This recipe is pretty thick. You can add more water or even beef broth to thin it out or use less sausage if you want. It's pretty easy to play around with and make it how you like it.
