Tis the season forconvenienceand belly warming foods! While we may be on the other side of the dark days of January, February can be just as cold (and filled with snow for some regions) despite the sun hanging around for a little bit more time here and there.
After a long and busy day when you just want to throw on a pair of slippers and snuggle in for the night, nothing beats the feeling of a warm, healthy dinner being ready and waiting upon returning home.
Enter the Crockpot, or Slow Cooker setting for you Instant Pot folks, also known as your personal chef. You simply throw in the contents of your meal, hit a few buttons, and voila! And I don’t know about you, but building my arsenal of delicious,trusted slow cooker recipes is my jam!

Hi my name is Rebecca Baron from My Natural Family. My husband and I have 4 children and we all have different dietary needs when it comes to eating. This can make dinner time challenging!
I don’t know about your home but when it is time to prepare dinner we sometimes find ourselves having to make three different meals. Does this happen to anyone else? We try to eat as a family. It is our time to talk together as a family and discuss how the day went and upcoming plans, and simply a time to be together.
While I was growing up my parents had family dinner every single night and I think it was a great example for me. So when we have to make multiple meals in the same night, of course it is preferable to find something everyone can eat, but that doesn’t always happen. So it is really nice to have simple recipes at hand that can be made quickly and without much preparation.
Slow cooker dinners are particularly good for this. So today I have a Crockpot Garlic HoneyChicken recipe for you. This Chicken is easy to throw together and super flavorful. It also has a good amount of vegetables in it and can be eaten plain or even served with white rice.

Crockpot Garlic Honey Chicken
Ingredients
- 8 chicken thighs (bone-in, skin removed)
- 1/3 cup balsamic Vinegar
- 1/2 cup honey
- 4 garlic cloves, minced
- 1 teaspoon sea salt
- 1/4 teaspoon chili flakes
- 2 bell peppers (red, yellow, or orange), sliced
- 1 yellow onion, sliced into thick pieces
- 1 zucchini, Cut into 2-3" spears
- 1 tablespoon arrowroot starch/flour
- 1 tablespoon water
- 1/4 cup cilantro, chopped
Instructions
- Place the chicken in the base of a crock pot. In a mixing bowl, whisk together the balsamic vinegar, honey, garlic, salt, and chili flakes. Pour over the chicken. Cover with the lid and cook on high for 3 hours.
- Add the onion, sliced peppers, and sliced zucchini to the crock pot. Cook for one more hour.
- Mix the arrowroot powder and water together to form a smooth mixture. Pour into the crockpot and mix into the cooking liquid by tossing around the chicken and vegetables. Let cook for another 10 minutes, or until liquid thickens enough to coat the chicken and vegetables. Add cilantro to the chicken and toss to distribute.
- Serve alone or with your favorite side.
- Serves 6-8
