Fresh herbs add a load of flavour to tartare sauce. Unfortunately using a tablespoon of dill and then finding the remainder of the bunch a week later in the back of the fridge wilted and sad is not particularly economical……

So next time you buy dill try wrapping it in cling film and freezing it, when you need some dill just slice what you need and return the remainder to the freezer.

Easy homemade tartare sauce is the perfect accompaniment to battered fish or dipping fresh prawns into. Fresh, piquant and creamy you'll never buy store bought sweet and gloopy tartare again.

Ingredients

  • 1 cuphomemade whole egg mayonnaise or a good quality store bought whole egg mayonnaise - see video below to make a super quick 30 second whole egg mayonnaise
  • 2 tablespoons finely chopped sweet and sour gherkins
  • 2 tablespoons finely sliced chives
  • 3 tablespoons baby capers, drained
  • 2 tablespoons finely chopped dill
  • zest of one lemon
  • 3 tablespoons finely chopped red onion
  • 1/2 teaspoon freshly milled black pepper
  • 2 tablespoons gherkin pickling juice
  • few drops of tabasco to taste - optional

Instructions

  • mix all ingredients together till blended
  • refrigerate for up to 1 week
  • serve and enjoy!
